Found this recipe on Pinterest while searching for easy and healthy weeknight dinners.
Made the crockpot version- it was delicious and so easy to make. Mike and Addie both loved it, and I can definitely see this becoming a regular meal in our rotation.
There is more broth in this than most chili and it tastes fairly light-which makes it (in my opinion) the perfect soup for warm weather.
We topped ours with fresh cilantro, sour cream, avocado and cheese. Yum!
